Burnt Sugar Icing

May add 1 cup chopped nuts sprinkled on cake.
2 | cups | sugar |
2 | tbl | butter |
1/2 | cup | milk |
1/4 | cup | boiling water |
1/8 | tea. | salt |
1 | tea. | vanilla flavoring |
- Caramelize 1/2 cup sugar. Add boiling water. Stir until dissolved.
- Add butter, milk, salt and remainder of sugar.
Boil to soft ball stage (236 deg F). Cool to room temperature.
- Add flavoring.
- Beat until thick and creamy. Spread on cake.
