Boiled Cake with Lemon Sauce

Boiled Cake |
1 | cup | sugar |
1/2 | cup | lard |
1 | cup | raisins |
1 | tsp | cloves |
1 | tsp | cinnamon |
1 | tsp | nutmeg |
1 | tsp | allspice |
1-1/4 | cups | water |
1-1/2 | cups | flour |
1 | tsp | baking soda |
- Place first eight ingredients into a saucepan. Heat
to a boil. Cool.
- Add the flour and baking soda and mix.
- Pour mixture into a shallow baking pan.
- Bake in a 350 degree F. oven for about 1 hour or
until done.
Lemon Sauce |
1/2 | cup | sugar |
1 | cup | water |
1 | tbsp | cornstarch |
3 | tbsp | butter |
1-1/2 | tbsp | lemon juice |
1/2 | tsp | grated lemon rind |
dash | | salt |
- Combine sugar, water and cornstarch in a double boiler
(over .. not in .. boiling water) and stir until thickened.
- Stir in the remaining ingredients.
- Serve hot!
