BLACKBERRY CHEESE CAKE

For those too young to remember OLEO is Margarine, during the WW II and for a time after that it was called - OleoMargarine, then it was shortened again to Margarine.....
Step 1 | | |
1 | package | graham crackers |
1 | stick | melted oleo (1/2 cup)* |
1/2 | cup | sugar |
Step 2 | | |
2 | | eggs |
1 | 8 oz. package | cream cheese, softened |
1/2 | cup | sugar |
Step 3 | | |
2 | tablespoons | cornstarch |
| | sugar, according to tartness of berries |
2 | cups | wild blackberries, loganberries or whatever berries you have handy. |
| | Whipped Cream for topping |
- Step 1
- 1 Pkg. graham crackers rolled into crumbs. Mix 1 stick melted oleo and 1/2
Cup sugar. Pat in bottom of 13 x 9 in baking dish.
- Step 2
- Beat 2 eggs until thick and creamy
Add: 1 8 oz. pkg. cream cheese, softened
1/2 Cup sugar
Pour over cracker crumb mixture an bake at 350 for 20 minutes. COOL.
- Step 3
- Use wild blackberries, loganberries or whatever berries you have handy.
Drain juice from frozen or canned berries, heat and thicken with 2 Tbsp.
cornstarch and sugar according to tartness of berries. Cook until thick, add
berries. Mix gently and set aside to cool and thicken. When cooled and
thickened pour over cooled cream cheese mixture. Set overnight and top with
whipped cream.
