Jennifer's Famous Apple Cake

Traditionally, I bake a bunch of these during the Holiday Season and
give to our neighbors. They are a big hit. Our neighbors look forward
to them each year.
Apple Cake |
1-3/4 | C | Sugar |
3 | | Eggs |
2/3 | C | Oil |
2 | C | Flour, sifted |
1 | tsp | Soda |
1 | tsp | Cinnamon |
1 | tsp | Salt |
2 | C | Grated apples |
1 | C | Chopped nuts |
- Combine the sugar and eggs, beat well. Add oil and salt. Mix well
with first mixture. Fold in apples and nuts.
- Pour into well greased 9" x 13" pan or bundt pan and bake at 375
degrees for 45 minutes to 1 hour. You may also make approximately 3
smaller cakes by using bread pans.
- When cake is done, punch holes in it with toothpick and while it is
still hot pour topping over the cake. Can be stored in refrigerator
covered.

1 | tbsp | Light corn syrup |
1/2 | tsp | Soda |
1/2 | C | Buttermilk |
1/2 | tsp | Vanilla |
- Mix and boil to soft ball stage (230 degrees on candy thermometer).
