Mom's Applesauce Stack Cake

Applesauce with sugar and spices to taste
Grease 3-4 cake pans of the same size. Cut a circle of baker's parchment or freezer wrap the size of the pan.
Beat sugar, eggs and shortening together. Mix buttermilk and soda and add to the sugar mixture.
Add vanilla and enough flour to make a dough stiff enough to knead. Working with about 1/3 of the dough at a time, knead lightly.
Place 1/3 cup dough on circle of paper, pat and roll to the size of the circle.
Slide hand under paper and flip onto pan.
Bake at 350 degrees F for 10 minutes. Continue, using all of the dough.
As the layers bake, stack them on a plate. Put 2-3 tablespoons of applesauce between layers.
Makes about 12 layers.
