Apple Tea Coffee Cake

Apple Tea Coffee Cake
1	C	Boiling water
2		Lipton flo-thru tea bags
1	lg	Tart apple, peeled, cored and coarsely chopped
1	C plus 2 tbsp	Sugar
2	C	All-purpose flour
1/2	tsp	Baking powder
1/2	tsp	Baking soda
12	tbsp	Butter, softened
2		Eggs
1/2	C	Sour cream
1	tsp	Vanilla extract
		Apple Crumb Topping*

Preheat oven to 350F.
In medium bowl, pour boiling water over tea bags; cover and brew 5 minutes. Remove tea bags. Stir in apple and 2 tablespoons sugar until sugar is dissolved. Let stand 1 hour. Remove apples; set aside. Reserve 1/4 cup tea liquid.
In small bowl, combine flour, baking powder and baking soda; set aside.
In large mixer bowl, with electric mixer beat butter and remaining sugar until blended. Beat in eggs, sour cream, reserved tea liquid and vanilla. Gradually beat in flour mixture until well blended. Stir in apples. Turn into greased 9-inch springform pan. Top with Apple Crumb Topping. Bake uncovered 1 hour or until toothpick inserted in center comes out clean. Let cool on a wire rack before removing from pan.
Makes about 10 servings.

In small bowl, combine brown sugar, flour and cinnamon. With pastry blender or fingers, cut or rub in butter until mixture is size of small peas. Stir in walnuts.
