Seven Minute Frosting

This recipe is a fond favorite from my childhood. I don't think that my mother ever used a different frosting on our birthday cakes and is from my mother's personal hand-made recipe book. It is a great tasting kind of a crusty icing that is sweet and really good.
2 | | egg whites (unbeaten) |
1-1/2 | cups | sugar |
5 | tablespoons | cold water |
1-1/2 | teaspoons | cornstarch |
1 | teaspoon | vanilla |
- Combine all ingredients except vanilla in upper part of a double boiler, beating constantly with an egg beater until frosting stands in peaks. (You may use an electric mixer to make it quicker!)
- Remove from heat.
- Add vanilla.
- Beat until frosting will spread easily on a 2 layer 8 inch cake.
