Triticale has a delicate gluten, so handle it as little as possible. It rises best first time, which means it's a fast bread to make; you can begin just 2 hours before mealtime and have fresh bread hot for the meal.
1 | tbsp. | active dry yeast |
1/4 | C | warm water |
1/4 | C | liquid honey |
2 | tbsp. | oil |
1-1/2 | C | water |
1 | tsp. | salt |
3-1/2-4 | C | triticale flour |
Dissolve yeast in warm water. Combine honey, oil, water, and salt in a large bowl. Stir in yeast mixture. Add flour a little at a time, kneading last part in with hands. Form into a loaf, place in a 4-1/2x8-1/2 inch bread tin, and allow to rise in a warm place until dough is just above the top of the pan. Place in a preheated 450F oven and lower the temperature to 375F immediately. Bake for 55-60 minutes. Remove from bread tin; allow to cool slightly before slicing.
