Sweet Potato Rolls

Blend potatoes with melted butter. Dissolve yeast in 1/2 cup warm water. Add yeast mixture, egg, salt, and sugar to potato mixture. Stir in remaining water. Add flour and mix well until soft dough forms. Turn onto a well floured board and knead for 10 minutes. Place in a bowl coated with oil. Cover and allow to rise 1 hour in a warm place.

Divide dough into 24 pieces and form into rolls. Place on a greased baking sheet, cover and let rise in a warm place for 30 minutes or until doubled in size. Bake at 425F for 15-20 minutes.
