2 | C | summer squash,coarsely grated, with skins |

Mix in order: shortening ,sugar, eggs, vanilla, squash, flour, salt, baking soda, and cinnamon. Pour into greased and floured bread pans. Bake 1 hour at 350F. Makes 2 loaves. Zucchini squash may be substituted.
