Why not dig those strawberries out from your freezer and try this delicious Strawberry Bread. You will be glad you did. Makes 2 loaves.
3 | C | flour |
1 | tsp. | baking soda |
1 | tbsp. | cinnamon |
1 | tsp. | salt |
2 | C | sugar |
4 | eggs, beaten | |
1-1/4 | C | vegetable oil |
2 | C | frozen sliced strawberries and juice, thawed |
1-1/4 | C | pecans, chopped (optional) |
Combine dry ingredients; add eggs, strawberries, and pecans. Stir until ingredients are moistened.
Spread into 2 well greased 9x5x3 inch loaf pans.
Bake at 350F for 60 to 70 minutes until bread tests done.
Cool in pan for 5 minutes. Remove from pan. Cool on rack.
