Sprinkle yeast over the 1/2 cup warm water in a medium bowl. Let stand 10 minutes. Stir to disolve yeast. Add second amount of water, flour and sugar. Beat until smooth. Cover with cheese cloth. Let stand at room temperature for several days, stirring 2 to 3 times a day. When ready, starter should have a sour smell with small bubbles rising to the surface. Place into a glass jar, cover and refridgerate.
NOTE:
For each cup that you use, add 3/4 cup flour, 3/4 cup water and 1 tsp. sugar. Stir well, cover and let stand at room temperature for the day. If you don't use on a regular basis, stir in 1 tsp. sugar every 10 days.
