Pumpkin Apple Struesel Muffins

2 | Cups | Sugar |
1 | Tbsp. | Pumpkin pie spice |
1 | Tsp. | Baking soda |
1/2 | Tsp. | Salt |
2 | Eggs | |
1 | Cup | Canned pumpkin |
1/2 | Cup | Oil |
2 | Cups | Chopped McIntosh apples |

Mix dry ingredients together. Mix wet instructions together and add them to the dry
ingredients just until moistened. Scoop batter into 18 greased muffin cups. Top with
streusel topping

1/4 | Cup | Sugar |
1/2 | Tsp. | Sugar |

Cut together butter with 1/4 cup sugar and 1/2 tsp. sugar until crumbly. Bake at 350°
for 30 to 35 minutes. Yield 18 muffins.
