2 | ripe pears, peeled and mashed, or 1 15 oz. can unsweetened pears, drained and mashed. | |
2 | C | all-purpose flour, sifted |
1 | tsp | baking powder |
1/2 | tsp | salt |
1/2 | tsp | cinnamon |
1/4 | tsp | allspice |
1/4 | tsp | nutmeg, freshly grated |
1/8 | tsp | ground cloves |
1/8 | tsp | ground ginger |
3 | tbsp | milk |
1/2 | tsp | vanilla |
1/2 | C | chopped walnuts |
Preheat oven to 350F.
In a large food processor, mix oil, sugar, eggs and mashed pears, pulsing well after each addition.
In a separate bowl, sift flour, baking powder, salt, cinnamon, allspice, nutmeg, cloves, and ginger. Add to sugar mixture and blend well. Add milk, vanilla, nuts and mix thoroughly.
Turn into a Bundt pan or an 8x4-1/2 inch loaf pan. Bake in a 350F oven for 30 minutes or until a toothpick inserted into center of loaf comes out clean.
Let cool and slice.
