The tropical aroma brings everyone to the breakfast table!

1/2 | Tsp. | Baking soda |
1/2 | Tsp. | Salt |
1/3 | Cup | Orange juice |
1/4 | Cup | Land O Lakes butter, melted |
1 | Egg | |
1 | 11 oz. can | Mandarin orange segments-drained |
1/3 | Cup | Coconut, flaked |
1/4 | Cup | Sugar |
1 | Tbsp. | Land O Lakes butter, softened |
1/2 | Tsp. | Grated orange peel |
Heat oven to 375°. In a large bowl, combine flour, 1/4 cup sugar, baking powder, baking soda and salt. In medium bowl combine orange juice, melted butter and egg. Add to flour mixture; stir just until moistened. Gently stir in orange segments. Spoon into greased or paper-lined muffin pan.
Topping:
In a small bowl, stir together coconut, 1/4 cup sugar, butter and orange peel. Sprinkle evenly over muffins. Bake for 18-23 minutes or until lightly browned. Let stand 5 minutes; Remove from pan.
