Moist and fruity. Very nice flavour with a hint of tea.
1 | C | strong tea |
1 | C | granulated sugar |
1/2 | C | raisins |
1/2 | C | chopped mixed glazed fruit |
1/4 | C | hard margarine or butter |
2 | large | eggs |
1 | tsp. | vanilla |
2-1/4 | C | all-purpose flour |
2 | tsp. | baking powder |
1/2 | tsp. | salt |
Heat first 5 ingredients in large saucepan, stirring occasionally, until simmering. Simmer, uncovered, for 3 minutes. Cool until saucepan feels warm to touch.
Beat eggs and vanilla together in small cup using fork. Stir into fruit mixture.
Add flour, baking powder and salt. Mix until just moistened. Turn into greased 9x5x3 inch loaf pan. Bake in 350F oven for about 50 minutes until wooden pick inserted in centre comes out clean. Let stand in pan for 10 minutes before turning out onto wire rack to cool.
Cut into 18 slices.
