1-1/2 | tsp. | baking powder |
2-1/2 | tsp. | baking soda |
1/2 | C | unsweetened cocoa powder |
2 | tbsp. | apple juice concentrate |
Set oven at 350F. Spray muffin pan with pam. In medium bowl combine sugar, applesauce, apple juice, and vanilla; blend well. Add zucchini, mix well. In large bowl stir flour, baking powder, soda and cocoa powder together. Add liquid ingredients and mix only till moistened. Spoon into muffin pans 2/3 full. Bake 25-30 minutes or till golden. Remove to rack.
