This is a very old English recipe, originating from Middlesex area of England. It is usually served sliced thin and spread with butter and preserves. It is a "quick" bread, however, don't be quick to serve it. It needs to mellow three days before serving. Makes a great gift.
6 | Cups | All-purpose flour |
2 | Tbsps. | Baking powder |
1/2 | Cup | Sugar |
1/2 | Tsp. | Salt |
1 | Cup | Raisins |
2 | Eggs | |
1 1/2 | Cups | Milk |
1/2 | Cup | Treacle (molasses) or |
dark karo syrup |
Mix together the dry ingredients and add raisins. Beat eggs, milk and syrup together. Add to flour mixture. Pour into 2 well-greased pans and bake in a preheated oven of 350° for 1 to 1 1/2 hours. Test middle for doneness. Cool on a rack. Wrap tightly and keep 3 days before cutting.
