2 | tsp. | baking powder |
1/2 | C | milk |
2 | eggs beaten | |
1/4 | C | chopped onion |
2 | tbsp. | oil or melted butter |
1 | C | boiling water |
Combine cornmeal, salt, and baking powder, pressing out any lumps. Add milk, eggs and onion; beat well. Stir in oil and boiling water. Bake in loaf pan 40 minutes at 375F or until puffed and golden brown. Onions will rise to the top.
