Preheat oven to 350°. Butter and flour a 9" by 5" by 3" pan. Combine flour, coconut, sugar, baking powder and salt in a large bowl and make a well in the center of the mixture. Combine the remaining ingredients. Add the liquids to the dry mixture and stir until well moistened. Spoon into loaf pan. Bake for one hour or until it tests done. Cool for 10 minutes in pan, then remove and cool completely on wire rack. Yields one loaf, which serves 8 to 10.
