This rises quickly and results in delicious, chewy loaves.
3-3/4 | C | boiling water |
3/4 | C | honey |
3 | tbsp. | salt |
6 | tbsp. | yeast |
3/4 | C | lukewarm water |
12-13 | C | whole wheat flour |
Combine water, honey, and salt in large bowl. Stir and cool until lukewarm. Meanwhile, dissolve yeast in 3/4 cup lukewarm water. Add to cooled honey mixture and stir in 6 cups flour, beating well. Incorporate rest of flour into dough, kneading when it becomes necessary on a floured board. Form into 3 medium or 4 small loaves and place in oiled bread tins.
Cover and let rise in warm place 30-45 minutes, or until above the tops of the bread pans. Bake in 375F oven 45 minutes, or until nicely browned and hollow sounding when rapped with the knuckles. Cool slightly and remove from pans. Allow to cool before slicing.
