2 quarts ripe tomatoes, unpeeled and chopped | ||
2 small onions, finely chopped | ||
1/2 cup chopped celery | ||
1 small hot pepper, chopped and seeded | ||
1/4 cup mild vinegar | ||
1 cup water | ||
2 tbsps. sugar | ||
3 tsps. salt | ||
1/2 tsp. pepper | ||
8 cloves | ||
l bay leaf | ||
Boil all ingredients except vinegar for one hour. Strain mixture, allowing some pulp to go through. Use masher to help. Add vinegar and bring to boil. Cool. Seal in airtight jar until serving. Serve in tall glasses with ice. Makes 10 servings.
