Peach Chiller
From the Kitchen of:

1 1/2 cups water
1/3 cup sugar
1/3 cup honey
1/4 cup mint leaves, lightly packed
1/2 cup lemon juice
1/2 cup orange juice
4 large peaches (1 1/2 pounds)
ice cubes
mint leaves
2 (10 ounce) chilled bottles ginger beer
Stir water, sugar and honey together in pan.
Add mint leaves and bring to boil. Simmer about 5 minutes.
Remove from heat, cover and steep 1 hour. Strain and discard mint.
Stir in lemon and orange juices. Cover and store in refrigerator until ready to use.
Remove pits and skins from 8 peaches and cut fruit in slices - 3 cups.
In blender, process smooth to make 2 cups puree. Combine with fruit syrup.
Fill 12 ounce glasses 1/2 full with ice cubes. Add about 1/2 cup peach base to each.
Peel and slice remaining peach and divide slices among glasses.
Top each with ginger beer, stir gently and garnish with mint sprigs.
Makes 5 cups peach base; enough for 10 servings.
