Orange Eggnog
From the Kitchen of:
Sandy
2 quarts milk
12 egg yolks
1 cup sugar
2 tsp. vanilla
12 oz. can frozen orange juice concentrate, thawed
meringue (recipe below)
orange sections for garnish
In large heavy pan, heat milk.
Beat yolk with sugar.
Whisk in 1 cup of hot milk.
Quickly stir into remaining hot milk and cook, stirring constantly, over very low heat until mixture thickens and coats back of spoon.
Remove from heat and flavor with vanilla.
Chill.
Stir in undiluted orange juice concentrate.
Pour into punch bowl.
Float heaping tablespoons of meringue on top of eggnog.
Garnish with orange sections and a portion of the meringue.
Makes 12 to 14 cups.
Meringue: 12 egg whites and 1/2 cup sugar
In large mixing bowl, preferably stainless steel, beat whites until foamy.
Add sugar, 2 Tbsp. at a time and continue to heat until mixture stand in stiff peaks.
