Mexican Hot Cocoa

Comments: Dutch-type cocoa has the richest taste
1-1/2 tbsps. cocoa |
2 tbsps. sugar |
few grains salt |
1/2 cup boiling water |
4 cups milk |
2 tsps. instant coffee |
vanilla or cinnamon to taste |
Mix in a saucepan cocoa,sugar, and salt.
Add the boiling water. Boil 3 minutes.
Add the instant coffee.
Add the 4 cups of milk. Heat slowly to just below the boiling point. Beat well with an egg beater or wire whisk.
Flavor with a few drops of vanilla or a bit of cinnamon to taste.
