Mango Fool

Comments: The tropical-peach taste of mangoes makes an exquisite fool. In a time crunch simply puree the mango and fold into 1 pint of softened vanilla ice cream or frozen yogurt.
3 ripe mangoes (about 12 oz. each) |
2/3 cup confectioner's sugar (or more, depending on sweetnes of fruit) |
2 tbsps. fresh lime juice |
1 tbsps. orange juice |
1-1/4 cups cold heavy cream |
- Cut flesh off pits; puree flesh in a blender or food processor. Blend in sugar, lime and orange juice.
- Cover and chill up to 1 day.
- To serve: Beat cream until soft peaks form. Fold together the mango puree and cream. You can blend them thoroughly to leave streaks.
Pile into stemmed glasses and top with Mango slices.
- Serve at once.
