Iced Mint Tea

7 regular size tea bags
12 sprigs fresh mint
grated rind of 3 lemons
2 quart boiling water
juice of 7 lemons (about 1 cup)
2 cups sugar
2 quarts water
fresh mint leaves
lemon slices
Combine tea bags, mint sprigs, lemon rind, and 2 quarts boiling water in large glass container.
Cover and steep 12 minutes.
Remove and discard tea bags.
Add lemon juice and sugar, stirring until sugar dissolves.
Strain tea; add water.
Serve tea over ice, and garnish each serving with mint leaves and lemon slices.
Yield: 1 gallon.
