Hot Chocolate for a Crowd

1 gallon milk
2 (4-ounce) bars sweet baking chocolate
1 cup sugar
2 tsp vanilla extract
1/2 tsp salt
Whipped cream
Cook milk in large Dutch oven over medium heat until milk is warm.
Cook chocolate in top of double boiler over simmering water.
Stir constantly, until chocolate melts slightly.
Gradually add 1 cup warm milk, stirring constantly, until chocolate melts slightly.
Stir chocolate milk mixture into remaining warm milk.
Add sugar, vanilla, and salt; continue to cook, stirring constantly.
Stir until sugar dissolved and milk is thoroughly heated.
Pour hot chocolate into mugs.
Top each with a dollop of whipped cream.
Serve immediately.
Yield: about 1 gallon.
