Honest-to-Goodness Hot Chocolate
From the Kitchen of:
Sandy
1 1/2 cups boiling water
1/2 cup unsweetened cocoa powder
pinch of salt
1/2 cup sugar
1/2 tsp ground cinnamon
6 cups milk
1 1/2 tsp vanilla extract
In small, heavy pan stir together the water, cocoa, salt, sugar, and cinnamon.
Place over low heat and bring to a simmer.
Continue simmering until the mixture is well blended and slighty syrupy; about 2 minutes.
Remove from the heat and reserve.
In a separate pan, heat the milk over low heat until just below the simmering point.
Remove the pan from the heat and stir in the cocoa syrup.
Stir in the vanilla; cover, and let stand 5 minutes before serving.
Ladle the hot chocolate into mugs and add a marshmallow and a peppermint stick to each mug.
Serves 6 to 8.
