Ginger Punch

Serving Size : 10
4 cups pineapple juice
4 cups water
1/4 lb. fresh ginger, scrubbed & cut into 1-inch chunks
1/2 cup lemon juice
1/2-3/4 cup sugar
Mix the pineapple juice, with 2 cups water in bowl.
Whirl ginger in blender with remaining 2 cups water.
Pour through strainer into pineapple juice, squeezing liquid from pulp; discard pulp.
Stir in lemon juice, then add sugar to taste.
Pour into pitcher, cover, and refrigerate for about 2 hours or until next day.
Stir and pour over ice to serve.
Makes 7 to 8 cups, about 10 servings.
