Frothy Apple Punch

To make sure the punch is frothy, mix it up just before serving.
3 cups apple cider, chilled
1/3 cup orange juice, chilled
2 cups light cream
3 egg whites
1/3 cup sugar
ground cinnamon
In large bowl combine cider and orange juice.
Add the cream. Using beater, beat until frothy.
In small bowl, beat egg white on hi speed till soft peaks form (tips curl over.)
Gradually add sugar, til stiff peaks form (tips stand straight).
Using beater gently fold beaten egg whites into cider-cream mixture, leaving small puffs of egg white.
Transfer mixture to large punch bowl. Sprinkle with a little ground cinnamon.
Serve punch immediately.
Makes 8 (6oz) servings.
