Dandelion Wine
From the Kitchen of:

Heads of dandelions
1 gallon of water
2 oranges
1 lemon
1 oz ginger root, crushed
4 pounds sugar
1 egg white
1/2 oz yeast on slice of bread
Pick heads only of dandelions.
Spread heads out on sheets of paper to get rid of insects.
To each gallon flower heads, add 1 gallon water.
Add fruits and ginger root tied in muslin bag.
Put all in pan and bring to boil.
Boil for twenty minutes.
Then strain and add sugar.
If not clear, add 1 egg white.
To make it work, put in 1/2 ounce yeast on slice of bread.
Leave it a week, strain, and bottle it loosely at first, then tighter.
It should stand for 6 months before using.
