Afternoon Chocolate

6 (1-ounce) squares unsweetened chocolate grated
1 1/2 cups sugar
1/2 tsp salt
1 1/2 quarts water
1 tbsp cornstarch
1 1/2 quarts milk, scalded and divided
Whipped cream
Combine first 4 ingredients in Dutch oven.
Cook over medium heat, stirring constantly, until mixture comes to boil.
Remove from heat; cool.
Dissolve cornstarch in 1/4 cup milk, stirring well.
Add cornstarch mixture and remaining milk to reserved chocolate mixture.
Cook over low heat, stirring constantly, until mixture is thoroughly heated.
Pour into cups, and serve immediatley with a dollop of whipped cream.
Yield: 3 quarts.
