Vegetable Baked Brie
From the Kitchen of: Pepper

1 | 8 oz | Mini Brie wheel |
1/2 | C | Diced onion |
1 | tbsp | Olive oil |
1/2 | C | Diced zucchini |
1/2 | C | Diced red pepper |
1/2 | tsp | Chopped garlic |

- Split brie in half horizontally into 2 rounds. Place bottom half of Brie in ovenproof crock; set aside.
- In skillet, over medium-high heat, sauté onions in oil for 2 minutes. Add zucchini, pepper and garlic; sauté until vegetables are tender. Spoon vegetable mixture over Brie bottom; replace Brie top. Bake at 375° F. for 15 to 18 minutes or until cheese melts. Serve warm as a spread with crackers.
Yield: 12 servings
