Orange Mocha

freshly brewed strong coffee

instant cocoa mix

cream for whipping

tbsp.
sugar

tbsp.
vanilla
Pare rind very thinly from orange with a vegetable parer. (Wrap fruit and save to use another time.)
Combine rind and coffee in a medium-size saucepan; simmer 5 minutes; remove rind and discard. Stir in cocoa mix until dissolved; remove from heat.
Beat cream with sugar and vanilla until stiff in a small bowl.
Pour coffee mixture into 6 mugs or large cups; float a generous spoonful of whipped cream on each. Serve hot.
